Add onion and cook for 2 minutes until softened.
Add chopped tomato and cook for 2-3 minutes until softened.
Stir the above mixture together. Cook for 1 minute, mixing well. Turn off the heat. Stir in coriander leaves.
Place the toasted sourdough slices on a plate and evenly spread mixture and half cut boiled eggs on top.
Serve hot, optionally garnished with extra coriander or a sprinkle of pepper.
